So for this week’s Great British Bake Off inspired recipe, I thought I would make a caramel cheesecake! If you want to see my other GBBO inspired bakes, I made a Black Forest Gateaux & Arlette biscuits! The GBBO contestants were asked to make a baked cheese cake, but I have chosen not to. I wanted instead, to share my FODMAP Caramel Cheesecake recipe!

Want to know how I made my wheat-free, dairy-free, FODMAP friendly cheese cake? Of cause you do! You can find the recipe I based mine on on the BBC Good Food website.
For the base you will need:
- 50g Pure Spread
- 140g Free-From Digestive Biscuits
Start by breaking the digestive biscuits into fine crumbs. I used the blender to do this. Then gently melt the butter into a saucepan. Once the butter is melted, add the biscuit crumbs to the mix & stir together. Place this mixture into the base of a cake tin. With the back of a spoon, press the mixture down so that it is densely packed. Place this in the fridge while you make the topping.


For the topping you will need:
- 4 Gelatine Leaves
- Cold Water
- 3 tablespoons Boiling Water
- 400g Free-From Yoghurt
- 100g Light Muscovado Sugar
- 50g Dark Muscovado Sugar
- A Pinch of Salt
- 1 teaspoon Vanilla Extract
- 400g (I used 225g as I didn’t order the right amount – oops!) Tesco Free-From Cheese Style Spread
Place the gelatine in a bowl & cover with cold water. Leave this for 5 mins, then drain. Pour the boiling water over the soaked gelatine & stir to dissolve.
Place the Free-From yoghurt in a small saucepan with the muscovado sugars and salt. Stir over a gently heat until the sugar dissolves. Add in the gelatine & vanilla extract, stir & add to a bowl to cool.
Whisk the Cheese Style Spread until smooth. Add the yoghurt mixture & whisk again. Pour this mixture on top of your chilled base. Cover with clingfilm & leave in the fridge overnight to set.
You can add Fudge to the centre. I didn’t read this part so didn’t add the dairy-free fudge to the shopping order!
I was really pleased with how this cheesecake turned out, particularly as it’s the first time I have used gelatine. I’m really enjoying this GBBO series as I’m stepping out of my comfort zone & learning loads. I hope you’re enjoying it too!

I love this recipe! Not only does it look delicious, having a brother allergic to gluten and dairy, this is fantastic! I cant wait to give this a go and maybe I’ll give him a slice too… haha
