The Great British Bake Off has returned to our screens once more & I have decided to celebrate this by adding an extra blog post a week, dedicated to a wheat-free, dairy-free, FODMAP friendly version of one of the bakes from the previous week because of my food allergies & IBS. So, here is my FODMAP Black Forest Gateau recipe!
To kick us off, I have replicated last week’s signature bake – the Black Forest Gateau. Want to know how to make it? Of course you do!
To start with, you’ll need to make 2 sponge cakes. The recipe for these is the same as for the cake in my Chocolate Fudge Cake. Leave the two sponges to cool for at least 2 hours before adding the filling. They can’t be too cool, but they can be too hot!
For the filling, you will need (apologies for the imperial measurements):
- 4oz Pure spread
- 8oz icing sugar
- 1 teaspoon of soya cream (Soya is not recommended on the FODMAP diet, but I’m allergic to nuts & can’t tolerate any dairy products. If you cant tolerate soya, look for a lactose-free, dairy alternative.)
- 1 teaspoon of cocoa powder
Begin by beating the pure & the icing sugar together. Once this is a smooth consistence, add the cream & beat this in. Add the cocoa powder & beat until the colour is even throughout & looks a little like this:
Add this evenly to the top of your first sponge (this will be your bottom later) & smooth out until it almost reaches the edge of the cake. Next add blueberries & then place your second sponge on top.
For the ganache, you will need:
- 100g chocolate (I used dark chocolate that has no milk in)
- 1/2 carton of Alpro Soya cream
Gently heat the cream. Drop the broken chocolate into the cream & continue to heat until the chocolate is completely melted.
Pour the ganache over the top of the cake, add more blueberries & leave to cool.

It was my husband’s idea to use blueberries, as I can’t have cherries. I wasn’t 100% sure how well it would work but the combination turned out great! I’ll definitely be checking out your baking posts & trying some myself! Xx
