I haven’t shared a recipe for a while & as Dan had a meeting with the other Curriculum Leads at his school while the other teachers got to have a ‘marking party’ to catch up with each other & on their marking in the restaurant with (free!) cake, I didn’t want the Curriculum Leads to miss out! So I thought I would share the cake I made for him with you. I decided to make a FODMAP flour free chocolate cake! It’s FODMAP friendly, as well as being dairy-free! Not only is it also wheat-free, it doesn’t contain any flour at all! I first saw this recipe from Avia, The Sparkleicious. She made a YouTube video of it, which you should definitely check out! I’ve made a few changes over the years I’ve been making this cake.

Ingredients:
120g Chocolate
120g Dairy-Free Margarine
120g Caster Sugar
80g Cocoa Powder
3 Eggs
1tsp Vanilla Extract
Method:
1. Preheat the oven to 180 degrees celsius (for fan oven). Grease a 20cm round cake tin and dust with cocoa powder.
2. Melt the chocolate & margarine in a glass bowl above a saucepan of boiling water
3. Remove from heat & stir in the sugar, cocoa powder, eggs & vanilla extract
4. Pour into the cake tin
5. Bake in a preheated oven for 35 minutes.
6. Remove the cake from the oven & leave to cool for 10 minutes
7. Top the cake as you like
As there were going to be about 20 members of staff at the meeting I made these in a bigger, rectangular shaped tin. As a result the depth of the mixture was smaller & I had to adapt the amount of time I cooked the cake in the oven for.
